Sausages, Beer Sausages in Dough
Ingredients: 30 g fresh yeast, 1 teaspoon sugar, 1/2 teaspoon salt, 300 ml milk, 500 g flour, 50 ml oil, 3 potatoes, 12 sausages, 1 egg for brushing
In the 300 ml of lukewarm milk, we will carefully dissolve 30 g of fresh yeast, 1 teaspoon of sugar, and 1/2 teaspoon of salt. This mixture will activate the yeast, ensuring that the dough will rise properly. Meanwhile, we take care of the potatoes: we boil them in salted water until they become soft, then we mash them with a fork or a potato masher, allowing them to cool completely. It is essential that they are well mashed to easily incorporate into the dough.
In a large bowl, we put the flour, and then add the mashed potatoes. We pour the warm milk in which we dissolved the yeast and start kneading with the necessary energy for about 2-3 minutes until the dough becomes homogeneous and elastic. Once we have obtained a uniform composition, we cover the bowl with a clean towel and let the dough rise in a warm place until it doubles in volume. This is the moment when the flavors develop, and the dough becomes fluffy and airy.
After the dough has risen, we roll it out on a floured surface to a thickness of about half a centimeter. We prepare sausages, which we cut into four, thus obtaining mini "piticoti". The rolled-out dough will be cut into rectangular pieces, making sure to obtain 48 perfectly equal portions. Each piece of sausage will be skillfully rolled in the cut dough, ensuring it is well wrapped.
We prepare a tray which we cover with parchment paper and grease with a little oil to prevent sticking. We place the mini rolls in the tray, leaving space between them, as the dough will continue to rise during baking. We brush each roll with beaten egg, in which we added a pinch of salt, to achieve a golden and appetizing crust. We put the tray in the preheated oven at high heat for about 5 minutes, then reduce the temperature to medium and continue baking until the rolls become beautifully golden.
These mini rolls can also be filled with beer sausages or cheese, and in the latter case, it is important to seal the ends of the rolls well to prevent the cheese from leaking during baking. They can be served hot or cold, alongside condiments such as mustard, ketchup, or horseradish cream. These delicious mini rolls are perfectly accompanied by a cold beer, making them an ideal appetizer for any occasion. Enjoy them with pleasure!
