Bacon Boiled with Paprika and Garlic
Ingredients: Bacon from the pig's throat (with layers of meat) salt (to taste) 1 tablespoon of peppercorns 3-4 bay leaves sweet paprika to preference garlic, a lot (2 heads)
To prepare a delicious homemade bacon, we start by carefully selecting the bacon from the pig's throat. It is important to ensure that it is fresh and of high quality. After selecting the bacon, we wash it well under a stream of cold water to remove impurities. Once we have completed this essential step, we dry the bacon with a clean towel or paper towel, making sure to remove any excess water. Next, we shape it nicely by leveling it, cutting off any sharp corners.
If the bacon is too long, we can cut it into two or three pieces to make our work easier. We generously salt these pieces, ensuring that the salt penetrates evenly to give a savory taste to the dish. In parallel, we bring water to a boil in a large pot, adding peppercorns and bay leaves to flavor the water. When the water reaches a boiling point, we carefully introduce the bacon into the pot and reduce the heat to a low level, allowing the bacon to simmer slowly. It is essential to add water from time to time to maintain a constant level, as well as to turn the bacon to ensure even cooking on both sides.
To check if the bacon is cooked, we use a fork. If it penetrates easily, then the bacon is ready. If we encounter resistance, we let it boil for a few more minutes. Once we believe the bacon is cooked, we remove it from the water and let it cool in the pot, covered with a lid, to retain its juiciness. It is recommended to let it cool completely. After it has cooled, we drain the excess water and generously sprinkle chopped garlic, pressing lightly to adhere well to the surface of the bacon. Then, we generously dust it with paprika, which will add not only color but also an unmistakable flavor.
To preserve the bacon, we can store it in an airtight container or plastic boxes and place it in the refrigerator. It is served cold, sliced thinly, alongside a shot of plum brandy as an appetizer, being a delicacy that will delight any meal. This bacon can be divided into portions and kept in the freezer, so we can enjoy it in the days to come. Our dish becomes not just a simple snack, but also a true culinary tradition, full of flavor and history.
