Stuffed Zucchini with Tomatoes

Ingredients: 1 large or medium zucchini, 4-5 cloves of garlic, 2 large tomatoes, 1 tablespoon of finely chopped parsley, 2 tablespoons of vinegar, 25-30 g of water, 1 teaspoon of olive oil (optional), 2 drops of bee honey.

Zucchini, a versatile and healthy ingredient, is the star of our recipe today. We start by washing it well and peeling it, then cutting it into thin strips, about one centimeter thick. This cutting technique will allow the zucchini to cook evenly and achieve a pleasant texture. In a pan heated over moderate heat, we add a little oil and start frying the zucchini strips. It is important to turn them occasionally so that they brown evenly on all sides. When they become golden and tender, we remove them from the pan and let them drain on a paper towel to absorb the excess oil.

Next, we turn our attention to the tomatoes. We slice the tomatoes into thin rounds to ensure they will be easy to place over the zucchini. We fry them in the same pan until they change color and become slightly caramelized, releasing their juice. The enticing aroma will fill the entire kitchen, and the sweet-sour taste of the fried tomatoes will perfectly complement our dish.

Once the zucchini has cooled slightly, we place it on a wooden board and sprinkle it with salt, being careful not to overdo it, as we want to preserve the natural flavor of the vegetable. Then, we take a slice of tomato, carefully remove the skin, the thickness of which is our choice, and place it on top of the zucchini strip. Between the two ingredients, a delicious combination is created, promising to delight any taste buds. We roll the zucchini with the tomato inside, creating a mini roll that we place on an elegant plate.

To complete this appetizer, we prepare to make a flavorful sauce. In a small bowl, we combine crushed garlic with water, vinegar, and oil, adding a few drops of honey to balance the acidity. Finally, we sprinkle a little chopped parsley, which will add a touch of freshness. We mix the ingredients well and, using a spoon, generously drizzle the zucchini rolls.

This simple yet sophisticated appetizer not only looks amazing but is also incredibly tasty. It is perfect for festive meals but also for a quick craving on an ordinary day. Serve it with pride and enjoy every bite! Enjoy your meal!
