Fish with Lemon and Orange, baked
Ingredients: For the marinade - 1 tablespoon French mustard with mustard seeds - 1 teaspoon honey - grated zest of ½ orange - grated zest and juice of 1 lemon - 2 cloves of garlic, crushed - 1 teaspoon chili powder, optional - salt - pepper, freshly ground. Others - 2 fillets of fatty fish, approx. 500 g (pangasius can be used) - 1 tablespoon olive oil.
We start by preparing a delicious marinade that will add a special flavor to the fish fillets. In a large bowl, we carefully mix the mustard, honey, freshly squeezed lemon juice, and grated lemon zest, along with grated orange zest. This mixture will provide a citrusy and sweet aroma that will blend perfectly with the fish. We then add the crushed garlic, which will add a spicy and intense note, and if we are fans of spices, we can incorporate a teaspoon of hot paprika for an extra flavor boost. It is essential to add salt and a little pepper to enhance all the flavors in the marinade. We mix all the ingredients well until we obtain a homogeneous paste.
After preparing the marinade, we add the fish fillets, making sure that each piece is evenly coated with this aromatic mixture. It is important to let the fillets marinate in the refrigerator for at least 30 minutes. This step will allow the fish to absorb all the delicious flavors and become much tastier.
Next, we prepare a sheet of aluminum foil that we grease with a little oil to prevent the fish from sticking. It is good to choose a sheet large enough so that we can completely wrap the fillets. We place the foil in a heat-resistant dish and pour half of the remaining marinade to create a flavorful bed for the fish. Then, we carefully place the fish fillets on this layer and add the rest of the marinade on top. Now, we carefully wrap the foil to create a tight package that will help cook the fish evenly.
We preheat the oven to 190 degrees Celsius and place the dish inside. We let the fish bake for about 10 minutes. After this interval, we carefully open the foil at the top to allow the steam to escape, basting the fish with the remaining marinade. We put the dish back in the oven without the foil for another 4-5 minutes. This will help achieve a slightly browned and appetizing crust.
