Apricot Chutney

 Ingredients: Apricots (greener) – 600 g Fresh ginger, grated – ¼ teaspoon Grated lime zest – ½ teaspoon Chili pepper – 1 piece Shallot – 2 pieces Garlic – 2 cloves Rice vinegar / honey and ginger vinegar – 100 ml Star anise – 2 pieces Cardamom – 3 seeds Brown sugar – about 300 g Gellfix – 2 teaspoons Hot water – about 50 ml Mustard seeds – 3 teaspoons

To create a delicious and aromatic apricot jam with Asian flavors, start by preparing the ingredients. Cut the apricots into small cubes, ensuring they are well-ripened to achieve a perfect jam. Choose apricots that have a vibrant color and an intense aroma, as these will influence the final taste of the preparation.

In a pot, add rice vinegar or honey and ginger vinegar, then place the pot over medium heat, allowing the vinegar to reduce slightly. This will concentrate the flavors and add an interesting note to the jam. Also add star anise and cardamom, which will provide an exotic fragrance and depth of flavor.

While the vinegar reduces, finely chop the garlic and shallot, then add them to the pot along with the chopped apricots, garlic, onion, and mustard seeds. This combination of ingredients will create a complex base full of flavors. Lower the heat and add brown sugar and a little water, stirring constantly to ensure even dissolution of the sugar.

Meanwhile, slice the chili pepper into thin rounds, being careful to remove the seeds if you want a less spicy jam. When the mixture in the pot starts to thicken and become more syrupy, add the Gellfix, grated lime zest, and chili pepper rounds. These ingredients will intensify the flavors, and the lime zest will add a fresh and citrusy note.

Let the mixture boil for a few more minutes, then remove the pot from the heat and let the jam cool. It is important for it to cool completely to set its flavors. Once cooled, the jam can be served both with turkey meat, where it will perfectly complement the taste of the meat, and with seafood, bringing a pleasant contrast between sweet and salty.
