Fan Zucchini

 Ingredients: 3 pieces of boneless chicken thigh, 2-3 zucchinis, 3-4 tomatoes, salt to taste, oil as much as you want to use for the garlic sauce, 1 head of garlic, dill to taste, 2 slices of cheese, grated cheese to preference, tomatoes for decoration.

To prepare a culinary delight that will enchant the taste buds, we start with the meat, which we carefully select, preferably pork or chicken. It is washed well under a stream of cold water, then deboned with a sharp knife. After achieving an even layer, the meat is lightly beaten with a meat hammer to become more tender. Salt is added on both sides to enhance its flavor, and it is placed on the hot grill, frying well on each side until it becomes brown and juicy.

Meanwhile, we take care of the vegetables. Fresh green zucchinis are thoroughly washed and sliced, but not completely, just until near their stem, so they remain attached at the base. Each slice is salted to extract excess water and placed on a plate with the stem side up to drain. The tomatoes, in turn, are washed and evenly sliced, ready to enrich our dish.

Once the meat is ready, it is sliced with a sharp knife, resulting in thin slices perfect for combining with the vegetables. Now, let’s focus on preparing the garlic sauce, an essential accompaniment. The garlic is peeled, then crushed with a knife, and finely chopped. Salt is added and mixed well, gradually incorporating oil, rubbing until a creamy paste is obtained, which will increase in volume. If you desire a thinner consistency, you can gradually add water.

The slices of meat are generously drizzled with the sauce, then placed between the slices of zucchini, and the sliced tomatoes are carefully arranged in between. All the ingredients are secured with a wooden stick, forming an attractive ensemble that will be cooked together. In a greased baking tray, this colorful combination is placed and drizzled again with sauce for an intense flavor. The tray is covered with aluminum foil, ensuring that the foil does not touch the ingredients, and placed in a preheated oven.

After a few tens of minutes, when the aromas start to spread throughout the kitchen, the foil is removed and left to brown for 10-15 minutes. In the final moments of cooking, slices of cheese can be added between the zucchinis and sprinkled on top for an appetizing look. It is finished with a sprinkle of fresh dill and, if desired, another serving of garlic sauce. The dish is garnished with fresh tomatoes, bringing a vibrant note and an explosion of colors. The dish is now ready to serve, being a true feast for family and friends!
