Apple Cake with Pudding
Ingredients: Base: -150 g butter -4 eggs -1 packet of vanilla sugar -1 pinch of salt -1 baking powder -150 g flour -150 g sugar -600 g apples -4 tablespoons of cherry liqueur Decoration: -a pudding (of your choice, I used raspberry) -300 g milk -50 g butter -3 tablespoons of sugar
Preparation method for the base: Start by preparing the ingredients for the base, making sure you have everything at hand. Put the butter in a saucepan and melt it over low heat, being careful not to let it burn. While the butter is melting, peel the apples and cut them into small, uniform pieces so that they bake evenly during preparation. Once the butter has completely melted, transfer it to a larger bowl where you will mix it with the sugar. Use a mixer to obtain a homogeneous mixture, then add the eggs one by one, continuing to mix.
Add the vanilla sugar, salt, and cherry liqueur, mixing well after each ingredient. Now, it’s time to focus on the dry ingredients. Gradually incorporate the flour and baking powder, mixing with a spatula or wooden spoon until no flour is visible. Then, add 80% of the chopped apples, ensuring they are evenly distributed in the mixture.
Pour the batter into a round mold that you previously greased with butter to prevent the cake from sticking. On top, arrange the remaining apples nicely to create an appealing look. Preheat the oven to 180 degrees Celsius and bake for about 50 minutes, or until the cake turns golden and passes the toothpick test.
Preparation method for the decoration: Meanwhile, you can prepare the decoration. In a saucepan, combine the milk, sugar, and pudding powder, stirring constantly to avoid lumps. Place the saucepan over medium heat and continue to stir until the pudding begins to boil and thickens. Once it reaches the desired consistency, remove the pudding from the heat and let it cool slightly. When it is warm, add the butter and mix well, so that the butter melts completely and incorporates into the pudding.
After the cake has completely cooled, pour the pudding on top, letting it flow unevenly to create a rustic and appetizing appearance. You can choose to decorate the cake with some grated apple slices or chopped nuts, depending on your preferences. Let the cake cool for about an hour, so the pudding can set a bit and the flavors blend perfectly. Enjoy this delicacy with your loved ones, knowing that it will be appreciated by everyone!
