Sweet beads
I made these biscuit balls with condensed milk when I needed a quick, no-bake dessert with simple ingredients. You don't need any special utensils, just a food processor to crush the biscuits. The balls come out compact, with a subtle caramel flavor if you use caramelized condensed milk. They are not as rich as Raffaello, but the texture is pleasant and the taste is balanced. Basically, in ten minutes you have a whole plate of small sweet snacks.
Quick Info
Total time: 15 minutes
Preparation time: 10-12 minutes
Baking/cooking time: no baking required
Servings: about 16-18 small balls
Difficulty: easy
Recipe type: quick dessert, no-bake, suitable for snacks or simple events
Ingredients
200 g plain biscuits
150 g flavored condensed milk (usually caramel)
30 g grated coconut
1 teaspoon honey (optional, if you want more sweetness)
Preparation steps
1. Crush the biscuits using a food processor until you obtain a fine texture, almost like powder. If you don’t have a processor, you can put them in a bag and crush them with a rolling pin, but it’s faster with a processor.
2. Place the crushed biscuits in a large bowl. Add the caramel-flavored condensed milk. If you are using honey, add it now too.
3. Mix well with a spoon or by hand until you get a mixture that binds together. If you see that the mixture is too dry and doesn’t form balls easily, you can add a little plain milk, but just enough to get a dough that is easy to shape. Don’t pour too much at once.
4. Take a tablespoon of the mixture and form balls of the desired size. I usually make small balls, about 2-3 cm in diameter.
5. Roll each ball in the grated coconut, then place them directly on a platter.
6. You can serve them immediately or after keeping them in the fridge for a while to firm up, if you prefer a firmer texture.
Why I make this recipe often
I like that the recipe doesn’t require baking and I can use ingredients I usually have at home. These balls are great for guests or as a quick snack, they are made without hassle and don’t dirty many dishes. They are perfect when you want something sweet but don’t have time to spend a lot of time in the kitchen.
Tips and variations
Tips
The mixture should be moist enough to form balls that don’t crumble, but not sticky. If you use very dry biscuits, you may need to add a tablespoon or two of plain milk.
If you don’t have a processor, the biscuits can be crushed manually, but it requires patience to make them as fine as possible.
The coconut can be ground further if you want a finer outer layer.
Substitutions
You can use plain condensed milk without flavor if you can’t find caramelized. The flavor will be more neutral.
Plain biscuits can be replaced with popular biscuits or graham crackers, just make sure they don’t have cream.
Honey is optional, especially if the condensed milk is already sweet enough.
Variations
You can add a few raisins or small pieces of dried fruit to the mixture for texture and flavor.
The coconut on the outside can be replaced with cocoa powder if you want a less sweet version.
If you want to make them more festive, you can put almonds inside each ball, but the original recipe doesn’t include nuts.
Serving ideas
You can place them in small paper molds for pralines if you serve them on a dessert platter.
They can be stored in the fridge before serving, especially in summer.
They go well as a snack with coffee or tea, or at a brunch with friends.
Frequently asked questions
1. Can the balls be made in advance, a day or two ahead?
Yes, they can be made in advance and stored in the fridge in a closed container. After a day, the texture becomes even firmer.
2. Can I use a different type of biscuit?
Yes, but it’s important that they are plain, without cream or filling. Digestive, popular, or graham biscuits work well.
3. If I don’t have caramel condensed milk, what can I use?
You can use plain condensed milk without flavor. The sweetness will be the same, but the caramel flavor will be missing.
4. How can I prevent the mixture from sticking to my hands?
If the mixture sticks to your hands, grease your palms with a little oil or cold water when forming the balls.
5. Can these balls be frozen?
I do not recommend freezing, as the texture changes and they are not as pleasant to taste after thawing.
Nutritional values
Estimate for one ball (if 18 pieces are made):
Calories: approximately 70-80 kcal per ball
Carbohydrates: 10-11 g
Fats: 2-3 g
Proteins: 1 g
The values are approximate and can vary depending on the type of biscuits or condensed milk used. Most of the calories come from biscuits and condensed milk.
Storage and reheating
The balls store well in the fridge, in a closed container, for up to 3-4 days. They do not require reheating. If you leave them at room temperature for a few hours, nothing will happen, but in summer it’s safer to keep them cool. If you want to keep them longer, make only what you will consume in 2-3 days, as the biscuits can absorb moisture and the texture changes.
This recipe is one of the simplest and quickest I’ve made, without complicated steps or hard-to-find ingredients.
