Bell Pepper in Sauce for Winter
Ingredients: 5 kg bell peppers, 1/2 kg sugar, 1/2 l vinegar, 1/2 l oil, 360 g tomato paste, bay leaves, whole pepper, and mustard seeds.
To prepare this delicious vegetable sauce recipe, start by gathering all the necessary ingredients. You will need fresh tomatoes, carrots, onion, garlic, olive oil, salt, pepper, sugar, vinegar, and of course, bell peppers. Make sure all the ingredients are of the highest quality, as the final taste will largely depend on their flavor.
Heat a little olive oil in a large pan over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Once the onion has softened, add the grated carrots and crushed garlic, continuing to cook for a few minutes. These ingredients will form the base flavors for your sauce.
In a separate bowl, chop the tomatoes and add them to the pan, mixing well. Cover the pan and let the ingredients simmer on low heat to combine the flavors. After about 10 minutes, add salt, pepper, a teaspoon of sugar, and the vinegar to balance the acidity of the tomatoes. Mix everything well and let the sauce simmer on low heat for another 15 minutes, stirring occasionally.
Meanwhile, prepare the bell pepper. Wash it well under running water, then remove the seeds and cut it into thin strips. When the sauce is ready, add the sliced bell pepper to the vegetable mixture in the pan. Continue to cook everything on low heat, stirring occasionally, until the bell pepper becomes soft but still retains its crunchy texture, a process that should take about 10-12 minutes.
Once the bell pepper has reached the desired consistency, take the sterilized jars and fill them with the hot mixture. Make sure to fill the jars almost to the top, leaving a little space for expansion. Immediately seal the jars with tight lids to create a vacuum that will help preserve the preparation.
