Here, the secret is to sauté the onion over medium heat, stirring constantly, so it doesn’t burn. The onion should become golden and transparent, and its aroma should spread throughout the kitchen.

Once the onion is browned, we add the flour, stirring quickly to form a roux. This will thicken our sauce. After a few minutes of frying the flour, we deglaze everything with the water in which the tongues were boiled and with milk. We mix well, ensuring that no lumps remain. When the sauce reaches the desired consistency, we add the sour cream, which will give a creamy taste and fine texture to the dish. Meanwhile, we slice the cleaned tongues thinly, being careful to maintain a uniform shape. These are added to the hot sauce, allowing them to simmer together for about 10 minutes, so that the flavors blend perfectly.

Finally, we generously sprinkle chopped fresh parsley, which will add a touch of freshness and color to our dish. We serve this dish warm, alongside a side of mashed potatoes or a crisp green salad.
