Quince Food
Quinces are a wonderful fruit, full of aroma and flavor, that deserve to be enjoyed in the most delicious ways. We start by preparing the necessary ingredients for this recipe, which will transform the quinces into a special dish, perfect for surprising family or friends. First of all, don’t forget to choose well-ripened quinces, with a bright yellow color, to achieve the best results.
Quinces are not peeled, but are washed thoroughly under a stream of cold water, then dried with a kitchen towel to remove any impurities. Once they are clean, we cut them into quarters, making sure to remove the seeds and the hard part near them. Now, we slice the quarters into suitable pieces, similar to those of an orange. These slices will not only add a pleasant appearance to the dish but also a unique texture.
In a deep frying pan, we heat the oil until it becomes very hot. The quince slices are dipped one by one in flour, ensuring they are evenly coated, then fried in the hot oil until they turn golden and crispy. After they have been fried, we remove them with a spatula and place them in another dish to drain the excess oil.
In the remaining oil in the pan, we add the remaining flour and sugar, stirring constantly over low heat until the sugar begins to caramelize, and the mixture takes on a golden hue. This will add a delicious taste and depth of flavor to our dish. Once we have achieved a beautiful color, we extinguish everything with a mixture of 100 ml of wine and 300 ml of water, stirring continuously to avoid lumps. We let it boil for a few minutes until the sauce thickens slightly and the flavors combine.
Once the sauce is ready, we carefully pour it over the fried quinces and let everything simmer together for a few minutes, so the quince slices absorb the delicious flavors of the sauce. The dish can be served both warm and cold, being perfect for any time of the day. Enjoy it alongside vanilla ice cream or a spoonful of sour cream to further enhance its taste. Enjoy your meal!
