Chicken with Tomato Sauce
Ingredients: 4 chicken thighs, 2 tablespoons of olive oil, 1 onion, 4 cloves of garlic, 400 g of tomatoes in juice, 1 bay leaf, salt, pepper, 1 liter of chicken broth
To prepare a delicious recipe for chicken thighs with tomato and garlic sauce, we start by washing the chicken thighs well. Then, we cut them in half to make serving portions easier. After we finish cutting, we place them in a bowl with warm water, adding a bay leaf to infuse the meat with pleasant flavors. We let the thighs sit in the bay leaf water for about 20 minutes to soften and absorb the flavors.
In a deep skillet, we heat two tablespoons of oil, preferably olive oil, to give our dish a richer taste. When the oil is hot, we add finely chopped onion and let it sauté until it becomes translucent and releases its aroma. It is important not to let it become too browned, but to achieve a soft and slightly golden texture.
After the onion has softened, we add the chicken thighs, being careful to brown them evenly on all sides. This step is essential for achieving a delicious crust that will enhance the flavor of the dish. Once the chicken has taken on a golden color, we pour in the chicken broth, which will bring a rich taste and help form a savory sauce. We cover the skillet with a lid and let it simmer on low heat until the liquid reduces to a quarter of the original amount.

We continue with canned tomatoes, which will enrich the sauce and give it a vibrant color. We salt and pepper to taste, being careful not to overdo the spices, to let the natural flavor of the meat shine through. We let everything simmer for about 10 more minutes until the sauce becomes thick and enticing.
