Appetizer with Chicken Livers

To prepare a delicious recipe of chicken liver with caramelized onions and potatoes, we start by preparing the necessary ingredients and utensils. Make sure you have on hand: 500 g chicken livers, 2 large onions, 2 tablespoons of honey, 150 ml of white wine, 4 large potatoes, 200 ml of milk, salt, pepper, flour for dusting the livers, as well as oil for frying.
The first step is to deal with the caramelized onions. In a deep skillet, heat a few tablespoons of oil over medium heat. Add the julienned onions and sauté them until they become soft and golden, about 5-7 minutes. Then, add the honey and white wine, stirring constantly. Increase the heat and let the mixture boil, allowing the liquid to reduce and thicken, being careful not to burn it. When the onions are well caramelized, cover the skillet and remove it from the heat, keeping it warm.
In the meantime, we take care of the chicken livers. Wash them well and cut them in half, then place them in a bowl and cover them with milk. Let them sit in the milk for at least an hour, to become more tender and to eliminate the strong taste. After the time has passed, drain the livers and season them with salt and pepper to taste. Dust them with flour, ensuring they are evenly coated.
In a skillet, heat a splash of oil and fry the livers on all sides for 3-4 minutes, turning them constantly to brown evenly. The livers are ready when they have a golden crust and are cooked inside, but remain juicy.
To serve, prepare the potatoes. Boil the potatoes in salted water until tender. Then, cut them in half and place them on plates. On top of each potato half, place a few hot livers and top with the caramelized onions. This combination of flavors will turn the meal into a true feast of tastes.
You can serve this dish plain, but also with various sauces, such as a refreshing yogurt sauce, sour cream sauce, mayonnaise, or a fresh salad to complement the dish. This recipe will not only delight the taste buds but will also bring a touch of flavor to every meal. Enjoy your meal!
