Faloodeh

Ingredients: 100 g rice noodles, 180 ml water, 125 g sugar, 2 tablespoons rose water, fresh lime juice, cherry jam or syrup or cherry juice. For serving: pistachios, rose petals, mint (optional for garnish).

Faloodeh is a traditional Iranian dessert, a refined choice that blends the subtle flavors of rose water with the freshness of lime or lemon juice. This delicacy, similar to rice noodles, will provide you with a unique culinary experience, evoking the atmosphere of colorful bazaars and the tales from '1001 Nights'. The preparation of Faloodeh is a captivating process that transforms simple ingredients into something truly special.

The first step in creating this delicacy is to prepare the syrup. In a pot, combine equal parts water and sugar. Place the pot over medium heat and stir constantly until the sugar completely dissolves in the water. Once the syrup begins to boil, reduce the heat and let it simmer for a few minutes. This syrup will form the sweet base of your dessert. After you have made the syrup, add a few drops of rose water, which will give an unmistakable fragrance and a touch of elegance.

In the meantime, take rice noodles and place them in a bowl. Pour hot water over them and let them soak for about 5 minutes. They need to become soft enough to mix easily, but be careful not to overcook them, as we want to maintain their texture. After they have softened, drain them well.

Mix the rice noodles with the syrup prepared earlier, ensuring that each strand is evenly coated. Transfer the mixture to a clean bowl, and to achieve an ideal texture, cut the noodles into smaller pieces. This step is essential, as it will facilitate mixing and help with even freezing.

Now, it’s time to prepare your dessert for the freezer. Place the bowl in the freezer and wait for about an hour. After this interval, take the bowl out and use a fork to mix the composition well. It is important that the noodles are aerated so that they do not form ice crystals. Repeat this mixing process 3-4 times until you achieve a desired consistency, slightly creamy yet still refreshing.

Finally, serve the Faloodeh in cups, drizzled with a little lime or lemon juice to add a note of acidity that will perfectly contrast with the sweetness of the syrup. You can also add a few slices of lime or lemon on top for an attractive appearance. This dessert is not just a simple delicacy, but a story served on a plate, taking you on a culinary journey to the heart of the Middle East. Enjoy it and savor every bite!
