To begin, prepare the necessary ingredients for this delicious recipe of onion and smoked bacon squares. The first step is to sauté the onion and smoked bacon in a pan with a little oil. Use medium heat so that the ingredients brown evenly, releasing their enticing aromas. Stir occasionally to avoid burning. Once the onion becomes translucent and the bacon is nicely browned, let the mixture cool in a bowl.

In another container, sift the flour to improve its texture, then add the paprika, lard, and melted but cooled butter. It is important that these ingredients are at room temperature to avoid prematurely activating the yeast. In a separate bowl, dissolve the salt in warm water and add rosemary if you want a more aromatic flavor. Next, incorporate gorgonzola or brie, slightly crumbled, to obtain a creamy mixture, and the yeast activated with sugar or dry yeast.

Mix all the ingredients until you obtain a homogeneous dough that easily separates from the bowl and your hands. Cover the bowl with a clean towel and let it rise in a warm place, during which time the dough will double in volume, becoming fluffy and airy. After about 1 hour, or until the dough has risen considerably, transfer it to a lightly floured surface.

Roll out the dough into a thin sheet, ensuring it is even, directly on a baking paper of the size of the tray used (38x28 cm). Place the sheet with the paper in the tray and cut the dough into 4x4 cm squares using a sharp knife. Let the squares rise for about 30 minutes in a warm place, covered with a towel. At this point, preheat the oven to 180 degrees Celsius.

After they have risen, brush the squares with a beaten egg yolk mixed with a little milk to give them an appetizing golden color when baked. Sprinkle thyme or rosemary on top if you desire an extra flavor. Place the tray in the preheated oven and bake for about 30 minutes, or until the squares are browned and evenly baked.

Remove the tray from the oven and let the squares cool on a rack so that they retain their fluffy texture. These delicious appetizers can be served warm or at room temperature, and if you wish, you can use them as lunch packs for school or work, being ideal for adding a touch of flavor every day.
