- 400-500 g diced pork
- 1 onion
- 2-3 large carrots
- 1 parsley root
- A small piece of celery
- Parsley and celery leaves
- ½ red bell pepper
- 4 tablespoons of soup vegetables (see posted recipe)
- Salt, to taste
- 500 ml cabbage juice (or brine)
- 100 g homemade noodles (fine homemade pasta)
- 1 tablespoon of oil
- 2 cubes of natural vegetable stock (Sylvia’s recipe)

Instructions:

1. Preparing the meat: Start by cutting the pork into small cubes. Place the meat in a large pot, add water (about 1.5 liters) and salt, bringing it to a boil. It is essential to use fresh meat to achieve a rich flavor!

2. Cooking the vegetables: In a frying pan, heat a tablespoon of oil over medium heat. Add finely chopped onion, sliced carrot, sliced red bell pepper, diced parsley root, and diced celery. Sauté all the vegetables for 3-4 minutes, stirring constantly. This step is important to intensify the flavors of the vegetables.

3. Combine the ingredients: After the meat has boiled, add the sautéed vegetables to the pot with the meat. You can also add the soup vegetables and the parsley and celery leaves. The latter will provide an extra flavor.

4. Boiling the soup: Let the soup simmer over medium heat for 30 minutes. A useful tip is to remove the parsley and celery leaves after their flavors have infused, especially if you have picky children.

5. Add the noodles: Once the meat is well cooked, add the homemade noodles. The homemade pasta will blend perfectly into the soup, giving it a comforting texture. Let it boil for 2-3 minutes, stirring gently.

6. Finalizing the soup: Finally, add the brine (cabbage juice) and let the soup come to a final boil. Taste and adjust the salt if necessary. A personal note: you can also add a few drops of lemon juice for a tangy flavor.

7. Serving: Serve the soup hot, sprinkled with chopped fresh parsley and celery leaves. It is delicious alongside a slice of fresh bread.

Vegan option: If you want to prepare a vegan version, you can omit the meat and replace the noodles with rice. This soup remains just as tasty and nourishing.
