Carp Brine

Carp is a delicious and versatile fish, and grilling it can transform an ordinary meal into an unforgettable culinary experience. We start by portioning the fresh carp. Whether we choose to cut it into fillets or keep the pieces whole, it is essential to salt and pepper it well to bring out its flavors. Charcoal grilling provides a smoky taste and a crispy texture on the outside, making the fish truly special. If you don't have a grill, don't worry! There are many methods to cook fish at home, such as frying or baking, but grilling will add a unique touch to the dish.

In the meantime, we focus on preparing the brine that will perfectly accompany the carp. Fresh garlic is an essential ingredient. We peel a few cloves of garlic and crush them well to extract all the flavor. The garlic will add an intense note to the brine. Then, we squeeze a lemon, being careful to remove any seeds. The chili pepper, sliced into rounds, will provide a hint of spiciness, and the amount can be adjusted according to everyone's preferences.

Fresh tomatoes are another key ingredient. We carefully peel them and cut them into slices or cubes, depending on preferences. In a pot, we bring 500 ml of water to a boil. Once the water starts boiling, we add the tomatoes, a sprig of thyme, salt, and a pinch of Delikat for extra flavor. The crushed garlic and lemon juice are then added to the mixture, along with the rounds of chili pepper. We let everything come to a boil, allowing the flavors to combine.

After the carp has been grilled, we carefully add it to the brine, letting it soak up the flavors for 2-3 minutes on low heat. This step is crucial as it allows the fish to absorb the rich tastes of the brine. Finally, we sprinkle everything with freshly chopped parsley, which will add a touch of freshness.

To complete this delicious dish, we serve the carp with a side of boiled potatoes or, for a traditional option, with polenta. This combination is not only delicious but also pays homage to Romanian culinary traditions. Enjoy your meal!
