Autumn Salad
Ingredients: 1 kg of carrots, 2 large celery roots, 1 kg of onions, 1 kg of green tomatoes, 1 kg of bell peppers, 1 kg of sweet peppers, 8 roots of horseradish, 4 liters of water, 1 liter of vinegar, 1 kg of sugar, 4 tablespoons of salt, 1 jar of mustard, 0.5 liters of oil.
To make a delicious and flavorful salad, start by thoroughly washing all the vegetables under a stream of cold water to remove any impurities. Then, carefully peel them of skins and seeds, making sure to keep the best parts. Once peeled, grate the carrot and celery on a large grater, ensuring to separate them into different bowls. These vegetables are essential for giving the salad a crunchy texture and fresh taste.
Chop the onion, green tomatoes, bell pepper, and sweet pepper into small pieces. These vegetables will not only add color but also a savory mix of flavors. Place each type of chopped vegetable into separate bowls to maintain order and have better control over the preparation process.
To make the brine, combine water, vinegar, salt, and sugar in a large pot. Bring the mixture to a boil. This will be the key element that helps the vegetables retain not only their crunchiness but also their natural flavors. Once the brine begins to boil, add the vegetables, starting with the carrot, followed by the celery, onion, green tomatoes, bell peppers, and sweet peppers. Each vegetable will need about 5 minutes of boiling time to absorb the flavors from the brine evenly.
After the vegetables have boiled, carefully remove them to a strainer, taking care not to mix them to avoid crushing. Allow them to drain well and cool, preferably until the next day, for the flavors to blend perfectly.
Meanwhile, prepare a dressing from mustard, grated horseradish, and oil. Mix these ingredients well until you achieve a smooth emulsion. This dressing will add a spicy and refreshing taste to the salad.
Once the vegetables have cooled and drained well, incorporate them into the mustard and horseradish dressing, mixing gently to avoid crushing. The vegetables should be evenly coated with the dressing to ensure an even distribution of flavors.
Once the salad is ready, distribute the mixture into sterilized jars. Make sure to press the vegetables well into the jars to remove air, thus helping to preserve them for a longer time. Place the lids on the jars and store them in a dark and cool place. This salad recipe will bring a touch of freshness and flavor to any meal, and the flavors will intensify over time. Enjoy!
