Sun-Pickled Cucumbers

 Ingredients: 50-60 g coarse salt, 1 liter of water, 3-4-5 cloves of garlic, cucumbers to fit into 3 jars. Dill sprigs.

For this delicious pickled cucumber recipe, you will need to follow a few simple yet essential steps to achieve a crunchy and flavorful dish. We start with choosing the cucumbers. It is important to select young, beautiful, and fresh cucumbers that are in perfect condition, without spots or scratches. Once you have chosen them, wash them well under a stream of cold water to remove impurities. If the cucumbers are thicker, it is recommended to peel them and cut off the ends. You can also score them lengthwise to allow the salt to penetrate better into the flesh.

The next step is to prepare the brine. In a container, dissolve the salt in cold water, ensuring you obtain a uniform solution. The amount of salt can vary depending on your preferences, but a general rule is to use about 100 grams of salt per liter of water. Once the brine is ready, wash the jars very well, so that no traces of dirt or bacteria remain.

Inside the jar, place a few sprigs of dill at the bottom to add flavor to the cucumbers. Then, arrange the cucumbers in the jar, leaving a little space between them. Besides cucumbers, you can add a few cloves of garlic, which will further enhance the taste of the pickles. After you have arranged everything, top it off with a few more sprigs of dill.

Over the cucumbers and spices, pour the cold brine, ensuring that all the cucumbers are completely covered. It is advisable to add a corner of bread on top of the pickles. In the following days, it is important to monitor the fermentation process. On the second or third day, when you notice that the water becomes cloudy and bubbles form, you can remove the bread. Continue to leave the cucumbers to sour for another day, but be careful not to leave them too long with the bread, as it can mold and spoil the taste of the dish.

Once the cucumbers have reached the desired level of sourness, you can transfer them to the refrigerator, either in jars or other containers, as preferred.
