Sah Cake – A Delicacy for a Triple Celebration
Today we celebrate a truly special occasion, a triple birthday in my family! My grandfather, husband, and granddaughter were all born on the same day, and I had the honor of preparing a delicious cake for them, along with some cookies and biscuits to make the party even sweeter. Even though my grandfather couldn't be present and my husband is far away, the spirit of the celebration is truly alive. I invite you to join me in making this tasty cake that will bring smiles to the faces of our loved ones.

Ingredients:
For the sponge:
- 6 eggs
- 6 tablespoons of flour
- 6 tablespoons of sugar
- 6 tablespoons of oil
For the cream:
- 500 ml of liquid cream
- 250 ml of yogurt
- 1 packet of gelatin (about 10 g)
- 100 ml of water (to hydrate the gelatin)
- 4 packets of vanilla sugar
- 1 vial of vanilla essence
- 2 tablespoons of cocoa powder (for the chocolate cream)
For decoration:
- Fondant
- Sugus candies (or any other preferred decoration)
Preparation:
Step 1: Preparing the sponge
1. Prepare the ingredients: Start by separating the egg whites from the yolks. Make sure the eggs are at room temperature for a better foam consistency.
2. Whipping the egg whites: In a large bowl, beat the egg whites with a mixer on medium speed. Gradually add the sugar and continue mixing until it completely dissolves and you achieve a firm foam.
3. Adding the ingredients: Sift the flour over the egg white foam and gently fold it in with a spatula, using an up-and-down motion to avoid losing air in the mixture.
4. Incorporating the yolks: In another bowl, whisk the yolks with the oil until creamy. Add this mixture to the egg whites and flour mixture, blending well.
5. Baking: Preheat the oven to 180°C. Pour the batter into a greased and floured (or lined with parchment paper) 26 cm cake pan. Bake for 30-40 minutes or until a toothpick inserted comes out clean. After baking, let the sponge cool on a wire rack.
Step 2: Preparing the cream
1. Hydrating the gelatin: Soak the gelatin in 100 ml of cold water and let it sit for a few minutes.
2. Whipping the cream: In a large bowl, whip the liquid cream until it becomes firm.
3. Incorporating the yogurt: Add the yogurt to the whipped cream and gently mix to avoid losing volume.
4. Melting the gelatin: Place the hydrated gelatin over a double boiler or in the microwave, gently heating it until completely melted. Let it cool slightly, then add it to the whipped cream and yogurt mixture, mixing well.
5. Dividing the mixture: Divide the cream into two equal parts. In one part, add cocoa powder and mix well, while in the other part, add vanilla essence and vanilla sugar.
Step 3: Assembling the cake
1. Slicing the sponge: Once the sponge has completely cooled, slice it horizontally into three layers.
2. Soaking the sponge: Prepare a syrup from water and sugar boiled until the sugar dissolves. Place the first layer of sponge in the cake pan and soak it well.
3. Alternating the creams: Use two piping bags (or plastic bags) to add the creams on the soaked sponge, creating concentric circles with both mixtures. Cover with the second layer of sponge, soak it, and repeat the process, alternating the colors.
4. Finalizing: Cover with the last layer of sponge, soak it, and refrigerate the cake for a few hours, preferably overnight, to allow the creams to set.
Step 4: Decorating the cake
1. Creating a smooth base: Once the cream has set, spread a thin layer of cream over the cake to create a base for the fondant.
2. Covering the cake: Roll out the fondant and cover the cake, ensuring it is even.
3. Final decoration: Use Sugus candies or any other preferred decorations to give a personal touch to the cake.
4. Serving: Keep the cake refrigerated until serving. It’s best to cut it with a sharp knife to achieve nice portions.
