Preparation time: 30 minutes
Baking time: 25 minutes
Total time: 55 minutes
Number of servings: 12
### Ingredients
For the base:
- 4 eggs
- 250 g sugar
- 3 tablespoons hot water
- 2 packets of vanilla
- 200 g flour
- 1 teaspoon baking powder
- Zest of one orange
For the caramel syrup:
- 1 cup sugar
- 50 ml water
For the vanilla cream:
- 200 g butter (at room temperature, very soft)
- 200 ml freshly squeezed orange juice
- 2 tablespoons flour
- 4 eggs
- 500 ml milk
- Vanilla essence
- 3 tablespoons powdered sugar
For the delicious caramel:
- 100 g sugar
- 100 g butter
- 250 ml freshly squeezed orange juice
- 2 tablespoons flour (dissolved in two tablespoons of orange juice)
### Preparation
1. Preparing the base:
Start by preparing the base. In a bowl, add the eggs and sugar. Use a mixer to beat them together, gradually adding hot water until you get a frothy mixture. Incorporate the flour, baking powder, vanilla, and orange zest. Mix gently, being careful not to deflate the air in the mixture.
Pour the mixture into a rectangular baking pan lined with parchment paper and bake at 180 degrees Celsius for 25 minutes. When ready, let it cool, then cut it in half horizontally.
2. Preparing the caramel syrup:
Caramelize one cup of sugar in a saucepan, being careful not to burn it. When it turns golden, extinguish it with 50 ml of water and stir until completely dissolved. Pour the syrup over the first half of the base, using a spoon to ensure it is evenly covered.
3. Preparing the vanilla cream:
For the vanilla cream, you can use a ready-made pudding or make one from scratch. If you choose the homemade version, boil 500 ml of milk with 4 eggs, 200 g of sugar, and vanilla essence. In another container, combine 200 ml of orange juice with 2 tablespoons of flour. Then, add the juice mixture to the boiled milk and let it boil, stirring constantly until thickened. Once cooled, incorporate the soft butter and powdered sugar into the vanilla cream.
4. Assembling the cake:
Spread the vanilla cream over the caramelized base and cover with the other half of the base. Refrigerate, preferably for a few hours, but ideally overnight, for the flavors to blend perfectly.
5. Preparing the delicious caramel:
In a saucepan, caramelize 100 g of sugar, adding 100 g of butter after it melts. Mix well and add 250 ml of freshly squeezed orange juice and 2 tablespoons of flour dissolved in juice. Let it boil until thickened and pour when warm over the cake cut into portions.
### Chef's Tip
For an even more intense flavor, you can add a little orange extract to the vanilla cream or replace some of the sugar in the caramel with brown sugar for a deeper flavor.

Served cold, this beautiful cake is perfect to be enjoyed alongside a fragrant tea or a cappuccino. In each portion, find a piece of my soul, and enjoy the combination of textures and flavors that will delight your taste buds.
