- 500 g dark chocolate
- 1500 g whipped cream (approximately 1.5 liters)
- 80 g sugar
- Cherries, canned or fresh (optional, to taste)

Preparation:

Step 1: Preparing the sponges

1. Cocoa sponge:
In a large bowl, mix the flour, starch, cocoa powder, and baking powder. This mixture will give the sponges a fluffy texture and an intense chocolate flavor.

2. In another bowl, beat the egg whites with a pinch of salt until foamy. Gradually add 50 g of sugar, continuing to mix until you obtain a firm and shiny meringue.
