Croissants

Ingredients: Puff pastry recipe: I. 4 tablespoons of oil, 250ml of warm water, 1 teaspoon of salt, flour as needed II. 7 tablespoons of flour, 200g of butter Filling: 3-4 tablespoons of Nutella, 3-4 tablespoons of ground almonds Decor: 1 egg for brushing, finely chopped almonds, powdered sugar

To prepare these delicious croissants, we start by mixing in a large bowl water, salt, oil, and a few tablespoons of flour. This mixture will form the base of our dough. Later, we will pour this composition into the bread machine, but if you don't have one available, that's no problem! You can continue the kneading process by hand. During this step, we gradually add the remaining flour until we obtain an elastic, supple dough that does not stick to our hands. It is essential that the dough is well-kneaded to develop the gluten necessary for a perfect texture.

In the meantime, in another bowl, we mix the 7 tablespoons of flour with the soft butter until we obtain a homogeneous paste. This paste will give our croissants a special flavor. After we finish preparing the dough, we start rolling out a not very thick sheet on a floured work surface and spread the butter and flour paste evenly. After completing this step, we roll the sheet, wrap it well in cling film, and place it in the refrigerator for at least an hour and a half. This resting time is essential to allow the dough to cool and become easier to handle.

Once the resting time is over, we take the dough out of the refrigerator and roll out a sheet again on the floured work surface, which we will fold into four. Just like before, we wrap it in cling film and put it back in the refrigerator, this time for at least an hour. This cooling and folding process is what will create the fine and crispy layers of our croissants.

Once the time has passed, we take the dough out of the refrigerator, roll it out again on the floured surface, forming a sheet from which we cut triangles. We place a nut of filling at the base of each triangle, and then we form the croissants, being careful to roll them tightly. We place the croissants on a baking tray lined with parchment paper, brush them with beaten egg, and sprinkle finely chopped almonds on top for added texture and flavor.

We bake the croissants in a preheated oven at 200-225 degrees Celsius until they become golden and fragrant, about 25 minutes in a convection oven. After they have browned nicely, we let them cool slightly, then sprinkle powdered sugar on top for a sweet touch. These croissants are perfect for breakfast as well as a snack during the day. Enjoy!
