Chicken with Green Beans
Ingredients: -1 kg chicken meat; -500 g green beans; -4 tomatoes; -1-2 onions; -4 tablespoons of oil; -2 tablespoons of flour; -2 tablespoons of tomato paste (I added more) -1 teaspoon of sugar; -4 cloves of garlic; -1 bunch of dill, finely chopped (about 2 tablespoons) -salt; -pepper; -sweet paprika
The meat is carefully cut, ensuring that uniform pieces are obtained that will cook evenly. After this stage, each piece is generously sprinkled with salt, ensuring it will be well-seasoned. Then, a pan is placed on the heat, where oil and a little water are added, mixing them to create a rich blend that will help to steam the meat. Finely chopped onion is added to the pan, which will bring an extra flavor to the dish. It is covered with a lid and left to cook over medium heat until the meat becomes tender and the onion softens.
After the meat is cooked, it is removed from the pan and set aside. In the remaining fat, flour is added, previously dissolved in a small amount of water. The flour is started to be sautéed, and at first, it will seem like a dough is forming. Don't worry, as constant stirring with a wooden spoon will help the texture to smooth out and return to the desired form. Now, it is time to add salt, pepper, paprika, and a little sugar to balance the flavors. Mix well, then incorporate the broth, which will provide a rich taste, and pour in two cups of warm water; ideally, vegetable soup should be used for extra flavor.
Let the mixture simmer for half an hour over medium heat, semi-covered, so that the flavors combine harmoniously. In the meantime, prepare the green beans. They should be cleaned, washed, and broken into small pieces. Boil them in a pot with salted water until tender. After boiling, drain them well in a colander.
The tomatoes should be blanched, peeled, and diced. They will add freshness and acidity to the dish. In a large pot, combine the pieces of meat, the boiled beans, and the tomatoes, along with the strained sauce. Add the crushed garlic, which will provide an intense and aromatic flavor. Let everything simmer together for a quarter of an hour, stirring occasionally. In the end, check the taste and adjust with salt and pepper to your liking. Sprinkle chopped dill on top for a fresh appearance and distinct aroma.
