 Ingredients: 5-6 pieces of onion (or 2 bunches of green onions) 1 kg of new potatoes 300 g of telemea cheese 2 eggs 1 bunch of fresh parsley 1 bunch of fresh dill salt, oil

We clean the potatoes and boil them in salted water to give them a pleasant texture and a savory taste. It is important to boil them only halfway, so they remain firm enough not to break during baking. After boiling, we remove them from the water and let them cool slightly, then cut them into slices or cubes, depending on preference.

We prepare a tray that we grease with oil so that the dish does not stick. Then, we add the sliced onions, and if we have green onions, we do not hesitate to chop the leaves as well, which add extra flavor and color. We generously sprinkle chopped fresh parsley for a fresh and vibrant taste.

The telemea cheese, an essential ingredient of this dish, is grated on a fine grater so that it integrates perfectly into the mixture. From the 200 grams of cheese, we mix one part with 2 beaten eggs to obtain a creamy composition that will bind all the ingredients together.

We place the boiled and cut potatoes in the tray with onions, followed by the cheese and egg mixture. It is important to cover the potatoes well so that they absorb the flavors of the onion and cheese. On top, we add the remaining grated telemea cheese, spreading it evenly to form a delicious crust at the end.

We finish the dish by sprinkling chopped fresh dill, which adds an extra freshness and an unmistakable aroma. We do not forget to sprinkle salt to taste and carefully pour about 200 ml of water, in which we have added 3 tablespoons of oil. This combination will help form a golden and crispy crust during baking.

We place the tray in the preheated oven at 180 degrees Celsius and let it bake for about 20 minutes. During this time, the ingredients will combine harmoniously, and a tempting crust will form on top, enticing any gourmet. The resulting dish is served warm, either as is or as a side dish alongside meats, adding extra flavor to the meal. Enjoy your meal!
