Step by step:

2. Preparing the dough: In a large bowl, sift the flour and add the salt, remaining sugar, eggs, lemon zest, and lemon essence. Pour in the risen starter and gradually add the sparkling mineral water. Mix with a spatula or your hands until the dough becomes homogeneous. Knead well for about 10 minutes, until the dough is elastic and bubbles form.
3. First rising: Cover the bowl with a clean towel and let the dough rise in a warm place for 30 minutes, or until it doubles in volume.
