Pasta with Sea Beans and Leeks
Ingredients: For 2 servings: 1 can of cooked chickpeas, 1 leek, 200 g short pasta, 2 tablespoons of oil, salt, pepper, grated pecorino (optional)
To prepare a delicious recipe of pasta with chickpea cream and leek, we will start by making sure we have all the necessary ingredients at hand. This is a simple recipe, yet full of flavors, combining the velvety texture of the chickpea cream with the delicate taste of the leek.
The first step is to open the can of chickpeas and drain the beans well. It is essential to rinse the chickpeas under cold running water to remove the salt and preservatives. Once the chickpeas are clean, we transfer them to a large pot and add the chopped leek, including the green leaves, which add extra flavor. We fill the pot with water, add salt to taste, and put it on the heat. We boil the mixture until the leek becomes soft and the chickpeas start to crumble, which will take about 15-20 minutes.
Meanwhile, we take care of the pasta. In another pot, we bring water to a boil, add salt, and, according to the instructions on the package, add the pasta. Make sure to cook them al dente, so they have a pleasant texture and do not fall apart too much when mixed with the chickpea cream.
After the chickpeas and leek are cooked, we drain the mixture and let it cool slightly. Then, we put the cooked chickpeas and leek into a blender or use an immersion blender to turn them into a smooth cream. It is important to add a little salt for taste and to blend well until we achieve a uniform consistency. If the cream is too thick, we can gradually add water from the pot in which the pasta was boiled until we reach the desired texture.
Once the cream is ready, we add the olive oil, which will bring a touch of refinement and a rich flavor. We mix well to integrate all the ingredients. When the pasta is cooked, we drain it and add it to the pot with the chickpea and leek cream. We carefully mix everything so that the pasta is evenly coated with this delicious cream.
Finally, we serve the pasta with a sprinkle of freshly ground pepper, which will enhance the flavors, and if desired, we can sprinkle grated pecorino cheese on top, which will add a salty and savory taste. This recipe for pasta with chickpea cream and leek is not only easy to prepare but also extremely tasty and nutritious, perfect for a quick yet impressive dinner. Enjoy every bite!
