Cumin and Dumpling Soup
Ingredients: 2 tablespoons of oil, 2 tablespoons of grated flour, 1 teaspoon of ground cumin, 1 tablespoon of sweet paprika, 3 eggs, 300 ml of sour cream, salt to taste
In a pot of approximately 2.5 liters, we start by adding 2 tablespoons of oil to heat. Choose a quality oil, such as olive oil or sunflower oil, as these will influence the final flavor of the soup. Once the oil is well heated, we add 2 heaping tablespoons of flour and 1 teaspoon of ground cumin. These ingredients will form a roux, which will give consistency and flavor to the soup. The frying is done over low heat to prevent the flour from burning, and it is allowed to fry for about 30 seconds, stirring constantly.
After this interval, we remove the pot from the heat and add 1 heaping tablespoon of sweet paprika. It is important to mix well so that the paprika integrates evenly into the mixture, bringing a vibrant color and rich flavor. Then, we extinguish everything with 2 liters of cold water, ensuring that the mixture is homogeneous. We put the pot back on the heat and wait for it to reach the boiling point. When the soup starts to boil, we season with salt to taste, being careful not to overdo it, as the cumin also contributes significantly to the flavor.
Meanwhile, in a separate bowl, we prepare a mixture of 1 egg yolk that we will combine with 300 ml of sour cream. This mixture will add a creamy and rich note to the soup. In a plate, we beat the egg whites and the other 2 eggs with a pinch of salt until they become frothy. Once the liquid in the pot comes to a boil, we pour the beaten eggs into the soup, stirring vigorously to form those characteristic "rags". We let it boil for 2-3 minutes, so the eggs coagulate slightly, bringing a pleasant texture.
To incorporate the yolk and sour cream mixture, we gradually pour some hot liquid over it, thus diluting the mixture. Once well homogenized, we add everything to the pot with the soup, stirring gently. Finally, we serve the cumin soup with crunchy bread croutons, which will add a note of texture and flavor. This soup is perfect for cool days and offers not only a delicious taste but also a comforting sensation. Enjoy your meal!
