Ingredients for the base:
- 200 g butter (at room temperature)
- 200 g granulated sugar
- 2 tablespoons orange extract
- 1 pinch of salt
- 4 egg yolks
- 4 egg whites
- 150 g flour
- 50 g quality cocoa powder
- 1 packet baking powder
Ingredients for the glaze:
- 200 g dark chocolate (minimum 70% cocoa)
- 100 ml heavy cream
- 30 g butter
Preparation:
1. Preheat the oven to 180°C. Prepare a 24 cm cake pan by greasing it with a little butter and lining it with baking paper to prevent sticking.
2. In a large bowl, mix the soft butter with the granulated sugar, orange extract, and salt. Use a mixer on medium speed to achieve a creamy and homogeneous mixture, about 3-4 minutes.
3. Add the egg yolks one at a time, mixing well after each addition. This step is essential for incorporating air and achieving a fluffy base.
4. In another bowl, beat the egg whites until you achieve a firm meringue. Gradually add a few tablespoons of meringue to the butter mixture to lighten the texture. Then, carefully fold in the remaining meringue using a spatula, with up-and-down motions to maintain the air in the mixture.
5. Sift the flour, cocoa powder, and baking powder over the egg white mixture and gently fold in the dry ingredients. Make sure there are no lumps for an even base.
6. Pour the mixture into the prepared pan and level the surface. Bake in the preheated oven for 30 minutes or until a knife inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then turn it out onto a cooling rack.
