Leek Cream Soup
To prepare a delicious and nutritious soup, we start by choosing fresh vegetables, which will bring an intense flavor and an unmistakable aroma. We will use carrots, celery, bell pepper, and onion, all of which are ingredients that complement each other perfectly. We begin by finely chopping the vegetables, ensuring they are uniform so they cook evenly. In a deep pot, we heat a little oil, preferably olive oil, for a richer flavor.
When the oil is hot, we add the chopped vegetables and sauté them over medium heat, stirring constantly to avoid burning. It is important to let them sauté for about 5-7 minutes until they become slightly translucent and release their aromas. Then, we take the leek, wash it well, and slice it into thin rounds. We add the leek to the sautéed vegetable mixture and continue cooking them together for another 5 minutes so that all the flavors combine.
After the leek has softened, we pour water over the vegetables, making sure the water level is about 3 fingers above them. We bring the soup to a boil, then reduce the heat and let it simmer on low for 20-30 minutes. This simmering time will allow the vegetables to release their nutrients and flavors, turning the water into a savory broth.
Once the vegetables have boiled, we take a strainer and strain the soup, keeping the liquid and separating the cooked vegetables. The latter will be blended with a blender or a hand masher until we obtain a fine paste. This paste will add a creamy consistency to our soup. After the vegetables have been pureed, we add them back into the strained soup, mixing well to combine the ingredients.
Finally, we can add spices to taste: salt, pepper, or even some fresh herbs, such as parsley or dill, for an extra touch of freshness. We let the soup simmer for a few more minutes to blend the flavors, then we can serve it hot, garnished with croutons or a spoonful of sour cream if desired. This soup is not only nutritious but also comforting, perfect for cold days or for moments when we need a light yet flavorful meal.
