Mushroom pie
We start by preparing the dough: in a small bowl, we add sugar and yeast; we mash them with a spoon until the mixture becomes liquid. It is important to ensure that the yeast is well activated, so we keep the bowl in a warm place for 10-15 minutes, during which the yeast will rise and begin to emit a pleasant aroma. We sift the flour into a large bowl to avoid lumps and add spices to taste, such as salt, rosemary, and cumin, which will give the dough a special flavor. After mixing the dry ingredients well, we add the risen yeast and gradually, little by little, warm water. It is essential to mix well so that all the ingredients combine harmoniously.
We knead the dough for about 10 minutes, gradually adding oil, which will give the dough a soft and elastic texture. Once we have obtained a homogeneous dough, we cover it with a clean towel and let it rise in a warm place away from drafts until it doubles in volume, which can take between 30 and 60 minutes, depending on the ambient temperature.
Meanwhile, we prepare the filling: we slice the mushrooms thinly and roast them on a baking tray over medium heat until they are lightly browned, thus releasing their flavors and juices. In another bowl, we beat the egg until frothy and add the sour cream, mixing well until we obtain a homogeneous and creamy mixture.
Once the dough has risen, we roll it out on a floured work surface, forming a thin sheet according to the size of the dish in which we will bake the tart. We grease the dish with oil or a little butter to prevent sticking. We place the sheet of dough in the dish, making sure to spread it evenly on the bottom and edges.
Over the dough, we pour the egg and sour cream mixture, then add the cheese slices, roasted mushrooms, and strips of bell pepper, which will add a touch of color and crunchiness. We bake the pie at 150 degrees Celsius for about 55 minutes or until it is beautifully browned on top. After removing it from the oven, we let the pie cool slightly before cutting and serving it, to allow the flavors to combine perfectly. This delicious tart will surely be a treat for both family and guests, turning any meal into a special moment!
Ingredients: For the dough we need: approximately 300g of white wheat flour, 2-3 tablespoons of olive oil, 15-20g of fresh yeast, 100ml of lukewarm water, salt to taste, a teaspoon of sugar, rosemary and caraway seeds to taste. For the filling we need: 10-15 mushrooms, 1 large egg (from free-range), 2 tablespoons of sour cream, 4 slices of cheese, a few sticks of bell pepper, a few fresh basil leaves.
