Macaroni Roll

 Ingredients: -350 g minced mixed meat -150 g thin and long slices of ribs or bacon -1 bell pepper -2 onions -2-3 tablespoons of tomato paste -1 egg -1 bay leaf -200-300 g macaroni -salt -pepper -oil

To prepare a delicious dish with macaroni and meat, start by boiling the macaroni in a large pot of boiling water. Add a pinch of salt, a little oil, and a bay leaf to give a special flavor to the dish. Boil the macaroni over medium heat, being careful not to leave them too long, but to cook them "al dente." This means they should remain slightly firm to the bite. Once they are cooked, drain them and let them cool, while removing the bay leaf, which has done a good job of flavoring the water.

In a separate pan, heat a little oil and add the finely chopped onion and pepper. Sauté them for a few minutes until they become translucent and fragrant. Then, add the minced meat and continue to cook the mixture, stirring constantly for about 10 minutes. The meat should be well cooked, and the flavors should combine harmoniously. Once the meat is ready, let the mixture cool slightly, then incorporate a beaten egg and tomato paste, mixing well to obtain a homogeneous composition. Finally, season with salt and pepper to taste, ensuring that each ingredient is well integrated.

Prepare a loaf pan or a heat-resistant dish, greasing it with oil to prevent sticking. Line the bottom and sides of the pan with slices of bacon or pancetta, placing them side by side, slightly overlapping. This will add a savory taste to the dish and will form a delicious crust. Pour 1/2 of the meat mixture into the pan, then place the macaroni lengthwise, forming an even layer. On top, add the remaining meat, ensuring everything is well distributed.

For an extra flavor, cover everything with the remaining slices of bacon or pancetta, using the same procedure of layering them overlapping. Preheat the oven to a moderate temperature and place the pan in the oven for 30-45 minutes, or until the dish develops a golden and appetizing crust that will make you want to serve immediately. Once ready, portion the dish into slices and serve hot, definitely accompanied by a glass of red wine, which will highlight the rich flavors of the dish.
