To make a delicious and fluffy cake, the first step is to prepare the ingredients correctly. We start by separating the egg whites from the yolks, being careful not to leave any yolk in the whites, as this could prevent us from achieving a firm foam. In a clean bowl, we beat the egg whites with a pinch of salt and 2 tablespoons of sugar, using an electric mixer. It is important to beat until we obtain a stiff foam that forms peaks, which will give the cake an airy texture.

In parallel, in another bowl, we mix the margarine (or butter, as preferred) with the remaining sugar for about 4-5 minutes, until we obtain a smooth and fluffy cream. This step is essential, as the sugar will partially melt, and the margarine will become more aerated. After we have obtained the margarine cream, we add the yolks one by one, making sure that each yolk is fully incorporated before adding the next.

Once all the yolks are in the mixture, it is time to add the flour. Start incorporating it gradually, alternating with the milk, mixing continuously to avoid lumps. The mixture should become homogeneous and easy to handle, having a fluid consistency, but not too liquid.

After the mixture is ready, we come with the beaten egg whites and carefully fold them into the mixture. This step is crucial, as the egg whites must be added with a spatula, using gentle folding motions, to avoid losing the air incorporated. Thus, the cake will remain fluffy and light.

We are now preparing the baking pan: we grease it well with margarine and dust it with flour to prevent the cake from sticking. Meanwhile, the oven should be preheated to a low temperature, as the cake will bake evenly and avoid burning on the surface. We pour the mixture into the prepared pan and make sure it is evenly distributed.

Here comes the most important part: the cake must be baked for 70 minutes without opening the oven door, as temperature changes can affect the texture. Even though it may be tempting to check, we must be patient. After 70 minutes, when we see that the surface of the cake has cracked, we know it is ready. We let it cool for 30 minutes before cutting it, to stabilize and get nice slices.

This cake is perfect for any occasion, having a delightful taste and a light texture that makes it loved by everyone. Enjoy each slice with a cup of tea or coffee, and savor the moment!
