To prepare these delicious cookies, we start by combining soft butter with sugar, using an electric mixer. It is important for the butter to be at room temperature to achieve a creamy and homogeneous texture. We mix the butter and sugar for about 3-5 minutes, until the mixture becomes fluffy and light in color. This is the ideal time to add a fresh egg and vanilla essence. We continue to mix, ensuring that the egg is fully incorporated into the mixture. The vanilla will add that subtle and pleasant flavor, making the cookies even more appetizing.
After obtaining a homogeneous mixture, the essential step of the recipe follows: we start to gradually add the flour. It is recommended to use a sieve to sift the flour, so we avoid the formation of lumps. We mix with a spatula or a wooden spoon, so that the dough does not disintegrate. When we have incorporated all the flour, we will obtain a dough that has a consistency similar to modeling clay, easy to shape and work with. If the dough seems too sticky, we can add a little more flour, but be careful not to overdo it.
Once the dough is ready, we will spread it on a surface dusted with flour, forming a sheet about 5 mm thick. If you prefer thicker cookies, you can opt for a greater thickness. Using your favorite cookie cutters, we cut out the cookies and place them on a baking sheet lined with parchment paper. It is important to leave a little space between each cookie, as they will slightly expand during baking.
The oven should be preheated to 180 degrees Celsius. Bake the cookies for 10-15 minutes or until they become slightly brown around the edges. Once they are ready, take them out of the oven and let them cool on a cooling rack. It is important to note that as they cool, the cookies will dry out a little, becoming crunchy and full of flavor.
Now that the cookies are cooled, you have the option to sandwich two of them with a delicious filling, such as your favorite jam, a fine buttercream, or even Nutella, for a decadent experience. Also, for a festive look, you can decorate them with colorful sprinkles or ground nuts before letting them dry.
