To prepare a delicious recipe of battered broccoli and zucchini, start by breaking a head of broccoli into small florets. These florets are washed well under a stream of cold water, then boiled in a pot of water and salt. It is important not to boil them for more than 2-3 minutes, as you want to keep the crunchy texture and vibrant color of the vegetable. After boiling, remove them from the water and drain well, allowing them to cool slightly.

While the broccoli is boiling, peel 1-2 zucchinis, slicing them thinly. These slices are seasoned with a pinch of salt and set aside to release their juice. In a separate bowl, beat 2-3 eggs with a pinch of salt and pepper, mixing well to obtain a homogeneous composition.

Now prepare the ingredients for the batter: put flour in one bowl, and breadcrumbs in another. If you wish, you can add some sesame seeds to the breadcrumbs, but this step is optional. After the broccoli has drained, use a paper towel to gently dry the florets, then coat them in flour, followed by the beaten egg, and finally the breadcrumbs.

In a frying pan, add oil and heat it over low heat. When the oil is hot, fry the broccoli florets until they turn golden and crispy, then remove them onto a paper towel to absorb excess oil.

Continue with the zucchini: wipe the slices with a towel, then coat them in flour, egg, and breadcrumbs, just like the broccoli. Fry the zucchini slices in oil and remove them onto a paper towel.

Now, it’s time to prepare the garlic sauce. Take 2-3 garlic cloves, crush them well, and add a pinch of salt, rubbing them with a spoon until they become a fine paste. While mixing, slowly add oil, continuing to stir until you achieve a creamy consistency. If you wish, you can enrich this sauce with a bit of sour cream or mayonnaise, or you can add water to adjust the consistency.

Drizzle the zucchini slices and broccoli florets with the garlic sauce to add an intense and aromatic flavor to the dish. Serve this delight alongside fresh bread, and if you have access, a few fresh tomatoes will perfectly complete the meal. This combination of battered vegetables with garlic sauce will surely impress anyone who tries their luck with this recipe!
