Green Salad Soup / Romaine Lettuce

 Ingredients: For 2 servings: 1 head of romaine lettuce, the green part of a green onion, 250 ml of water, 150 ml of yogurt (or sour cream, kefir, buttermilk), 1 egg, salt, 1 teaspoon of oil, 100 g of thinly sliced smoked bacon.

Lettuce soup with bacon is a simple yet refined dish that will bring a fresh and comforting note to your meals. We start by washing the lettuce very well, ensuring that we remove any impurities or dirt. We chop it finely, being careful not to leave pieces thicker than 1 cm, so it cooks evenly.

Once the onion becomes translucent, we add the chopped lettuce, letting it sweat and soften a bit. It's time to add enough water to cover the ingredients, and we let everything simmer on low heat for 30 minutes.

Whisk the egg with the yogurt until you achieve a smooth mixture, then carefully pour this mixture into the pot. To add a crunchy note to the dish, we turn to the bacon slices. In a pan, without adding any fats, fry the bacon slices until they become crispy. The frying process will release the bacon fats, and its aroma will be irresistible. Once the bacon is ready, place it on a paper towel to remove the excess fat.

The lettuce soup is now ready to be served. Add the crispy bacon pieces on top, providing a pleasant contrast between the soft texture of the lettuce and the crunchy bacon. This soup can be enjoyed warm, but also cold or at room temperature, making it perfect for hot summer days.
