Chicken rolls with sour cream
1. The minced meat is mixed with the bread soaked in water, eggs, pepper, salt, and chopped parsley. It is important that the bread is well squeezed to avoid adding too much water to the mixture. After obtaining a homogeneous mixture, set it aside to rest for a few minutes. This time allows the flavors to combine and intensify, and the meat to absorb the taste of the fresh parsley, which adds a vibrant note to the dish.
2. The chicken breasts are placed on a cutting board; if they are thicker, it is recommended to gently pound them with a meat hammer to even them out. This method not only helps with even cooking but also makes the meat more tender. After pounding the breasts, sprinkle a little salt and pepper on both sides to enhance the flavor.
3. On each chicken breast, place a portion of the minced meat mixture, spreading it evenly over the entire surface. Make sure not to exceed the edges to avoid the filling leaking during cooking. Once you have finished filling each breast, carefully roll them up, starting from one end and ensuring that the filling stays inside. You can secure each roll with a toothpick or kitchen twine to ensure they do not come apart during cooking.
4. Heat a large skillet over medium heat and add a little olive oil. Once the oil is hot, place the chicken breast rolls in the skillet, leaving enough space between them to brown evenly. Cook the rolls for about 4-5 minutes on each side until they become golden and crispy. Then, reduce the heat and cover the skillet with a lid, allowing the rolls to cook on low heat for 10-15 minutes to ensure they are fully cooked inside.
5. After the rolls are ready, remove them from the skillet and let them rest for a few minutes before slicing. This step is essential as it allows the juices to redistribute within the meat, resulting in a juicier dish. Serve the rolls warm, alongside a side of grilled vegetables or a fresh salad, for a balanced and delicious meal.
