Lemon and raspberry cheesecake
I have made this lemon and raspberry cheesecake several times, usually when I'm craving something refreshing but don't want overly complicated desserts. Instructions
1. Crust
1.1. Cream the softened butter with the sugar, powdered sugar, and salt in a bowl.
1.2. Add the beaten egg, lemon zest, and baking soda dissolved in lemon juice.
1.3. Gradually add the flour and mix until the dough starts to come together.
1.4. Knead a little by hand. If it's still sticky, sprinkle a little more flour until it no longer sticks to your hands.
1.5. Wrap the dough in plastic wrap and refrigerate for an hour. If you're in a hurry, it can also go in the freezer for 20-30 minutes.
2. Preparing the pan
2.1. Remove the dough, roll it out into a thin, round sheet with a rolling pin.
2.2. Place it in a round baking pan lined with parchment paper, gently pressing the edges.
2.3. Prick the crust all over with a fork.
3. Cheese filling
3.1. In a large bowl, combine the cottage cheese and sugar. Mix for a few minutes until well blended.
3.2. Add the sour cream and mix.
3.3. Add the eggs, one at a time, mixing with a whisk after each addition.
3.4. Finally, add the lemon juice and vanilla extract, mixing until the filling is smooth.
4. Baking
4.1. Pour the filling over the crust, leveling it gently.
4.2. Place the pan in the preheated oven at low heat (about 160°C if using an electric oven).
4.3. Bake for about an hour. The filling should have a shiny, slightly set surface. If you look closely, it should not be liquid in the center but should jiggle slightly.
4.4. Turn off the oven and let the cheesecake cool slowly inside (with the oven door slightly ajar) to prevent the filling from cracking.
5. Finishing and decorating
5.1. Once completely cooled, remove the cheesecake from the pan and transfer it to a serving platter.
