Kotanyi Cake
To prepare a delicious dessert, we will start by gathering all the necessary ingredients. In a large bowl, we cream the soft butter together with the sugar, using a spatula or a mixer, until we obtain a creamy and fluffy mixture. This will be the base of our dough. Once we reach this consistency, we add a fresh egg, followed by the honey, which will provide a special taste and pleasant aroma.
After well incorporating the egg and honey, we will add the baking soda dissolved in a little milk, which will help the dough rise. Now it is time to add the cocoa, which will give color and an intense chocolate flavor. Finally, we sift the flour and add it gradually, stirring continuously, until we obtain a homogeneous and easy-to-shape mixture.
We divide the dough into three equal parts and, on a 20/30 cm tray, we spread each part into a thin sheet. We bake the sheets at a moderate temperature for about 15 minutes, until they become lightly golden. In the meantime, we take care of the delicious cream. In a saucepan, we put the liquid cream over a steam bath and, when it becomes very hot, we add the chocolate broken into small pieces. We constantly stir until the chocolate melts completely and blends with the cream, resulting in a smooth cream.
After we have homogenized the composition, we place the saucepan over medium heat and let it boil for 4-5 minutes, stirring continuously to prevent burning. Once the cream is ready, we let it cool slightly, then add the gelatin dissolved in cold water, which we previously heated over low heat, to ensure that the granules dissolve completely. If we want an even more intense taste, we add the lemon zest, which will provide a pleasant contrast with the chocolate.
It is important not to boil the gelatin, but to ensure that it integrates well into the cream. After the cream has been prepared, we leave it in the refrigerator from evening until morning, to thicken. In the morning, using a mixer, we whip the cream until it becomes fluffy and airy.
Once the sheets have completely cooled and the cream is ready, we can start assembling the cake. We place one sheet on a board, generously spread it with our delicious cream, then add another sheet and repeat the process until we finish all the sheets. Finally, we place a weight on the cake to help the sheets soften and let them sit until the next day. This will allow the flavors to blend perfectly, resulting in an exceptionally tasty dessert, which we can serve with pleasure.
