The history of this cake is lost in the mists of time, but we know for sure that the combination of chocolate and walnuts has captivated the hearts and tastes of people around the world. This recipe brings together tradition and modernity, offering you a dessert that not only looks splendid but also impresses with its taste.

Ingredients:

For the base:
- 5 large eggs
- 150 g sugar
- 3 tablespoons oil (preferably sunflower or olive)
- 3 tablespoons caramel syrup (see below for how to make it)
- 150 g flour
- 2-3 tablespoons cocoa
- 50 g ground walnuts
- 2 packets vanilla sugar
- 1 teaspoon baking powder

For the chocolate and walnut mousse:
- 1 bar of milk chocolate (about 200 g)
- 500 ml liquid cream
- 250 g ground walnuts
- 1 packet gelatin (soaked in cold water according to the instructions on the packet)

For the glaze:
- 100 g chocolate (choose a quality chocolate for better taste)
- 4 tablespoons milk

Step by step:

1. Making the caramel syrup:
- In a saucepan, add 100 g of sugar and place it over medium heat. Let the sugar caramelize, stirring gently to avoid burning. When it turns golden, carefully add 200 ml of cold water (be careful of the hot steam!). Let it boil until all the caramel melts. Turn off the heat and let the syrup cool. You will use 3 tablespoons for the base and the rest to soak the base.

2. Making the base:
- Separate the egg whites from the yolks. In a large bowl, beat the egg whites with a pinch of salt until they form stiff peaks. Gradually add 150 g of sugar, continuing to beat until you get a glossy meringue.
- In another bowl, mix the yolks with the oil, vanilla sugar, and the 3 tablespoons of caramel syrup. Pour this mixture over the egg whites. Gently fold, being careful not to deflate the meringue so that it remains fluffy.
- Sift the flour, cocoa, and baking powder over the egg mixture and carefully fold them in. Finally, add the ground walnuts.
- Pour the mixture into a round cake pan with a diameter of 26 cm, lined with baking paper. Bake in a preheated oven at 180 degrees Celsius for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Once baked, let the base cool.

3. Making the chocolate and walnut mousse:
- Melt the chocolate together with 100 ml of cream in a double boiler or in the microwave (be careful not to burn it). Once melted, let it cool slightly, then add the soaked gelatin and mix well.
- In a separate bowl, whip the remaining 400 ml of cream until firm. Add the whipped cream to the melted chocolate and gently mix to maintain the airy texture. Add the ground walnuts and mix again.

4. Assembling the cake:
- Cut the base into three equal parts. Soak each layer with the remaining caramel syrup.
- Spread a portion of mousse on the first layer of the base, then place the second layer on top. Repeat the process with the mousse and add the last layer of base.
- Use the remaining mousse to cover the edges of the cake, ensuring it is evenly distributed. Decorate with ground walnuts on top.

5. Making the glaze:
- Melt the chocolate together with the milk, stirring constantly. When it is smooth, let it cool slightly, then pour it over the cake, ensuring it flows evenly over the edges.

6. Serving:
- Let the cake cool in the refrigerator for at least 2 hours before serving. It is ideal to prepare it a day in advance to allow the flavors to blend perfectly.

Useful tips:
- Use good quality chocolate to achieve a creamier and more flavorful mousse.
- You can replace walnuts with hazelnuts or almonds, depending on your preferences.
- The cake can be served with a scoop of vanilla ice cream or a cup of aromatic coffee for a delicious contrast.

Nutritional benefits:
This chocolate mousse and walnut cake is not only delicious but also nutritious. Walnuts provide a good dose of essential fatty acids, proteins, and vitamins, while dark chocolate, if you choose it instead of milk chocolate, has a high content of antioxidants.

Frequently asked questions:
- Can I use dark chocolate instead of milk chocolate? Absolutely! Dark chocolate will give a more intense and less sweet flavor.
- How can I make the cake healthier? You can reduce the amount of sugar in the base and mousse or use natural sweeteners.
- Is it possible to make the cake gluten-free? Replace the flour with a gluten-free option, such as almond or coconut flour.
