Ingredients: 300 g of flour, 1 teaspoon of baking powder, vanilla essence, 1 vanilla sugar, 1 yolk, 150 g of butter (margarine), 50 g of powdered sugar, 1 pinch of salt. Filling: i. at the base of these biscuits, they are filled with poppy seeds: 100 g of poppy seeds, 2 tablespoons of honey, a knob of butter. ii. 3 tablespoons of jam (to taste), 3 tablespoons of ground almonds, 1 egg for brushing.
To prepare these delicious ear-shaped pastries, we start by ensuring we have all the ingredients at hand. It is essential that the butter is soft, so we leave it at room temperature for a few hours before starting. In a large bowl, we add the soft butter and powdered sugar, mixing them with a spatula or a mixer on low speed. We continue mixing until we obtain a homogeneous composition, creamy white in color, which should be airy and fluffy.
Once we have achieved this creamy mass, we add the egg yolk, continuing to mix until it is perfectly incorporated. In another bowl, we combine the flour with the baking powder, taking care to mix them well to avoid lumps. Gradually, we begin to add the flour mixture to the butter composition, using a spatula or a wooden spoon. We knead gently until all the ingredients are well incorporated and form a ball of dough.
We cover the ball of dough with plastic wrap and put it in the refrigerator for about an hour. This step is crucial, as it helps to firm up the dough, making it easier to handle. After the resting time has passed, we take the dough out of the refrigerator and prepare to roll it out on a floured work surface to avoid sticking.
Using a rolling pin, we roll the dough into a thin sheet, about 3-4 mm thick. Then, with the help of a cookie cutter or a glass, we cut circles from the dough. These will form the base of our pastries.
After cutting the circles, it’s time to add the desired filling. This can be a mixture of sweet cheese with raisins, fruit jam, or chocolate, depending on everyone's preferences. We place the filling in the center of each circle and then fold the dough, bringing together the three corners to form a triangle or an ear shape.
Each pastry must be brushed with beaten egg to achieve a golden and shiny crust at the end. We place the pastries on a baking tray lined with parchment paper and bake them in the preheated oven at 200°C, fan-assisted, for about 15 minutes, or until they turn golden and appetizing.
After baking, we let them cool in the tray for a few minutes, then transfer them to a rack to cool completely. These pastries are perfect to be served as a dessert or snack, alongside a cup of tea or coffee. Enjoy!
