Beans in Clay Pot
Ingredients: 400 g white dried beans, 4 goose thighs (I used half a coconut), 5-6 garlic cloves, 2 red onions, 6 tablespoons goose fat (or 150 ml oil), salt, pepper, 1 teaspoon paprika, 1/2 teaspoon thyme.
Beans, an essential ingredient in Romanian cuisine, are more than just a simple vegetable; they are a source of nutrients and a symbol of culinary traditions. To achieve a delicious dish, we will start by soaking the beans in cold water the night before. This step will not only reduce cooking time but also improve the digestibility of the beans.
On the morning of cooking, we will take care of the meat. Choose pieces of pork or beef, depending on your preferences, which we will fry in a heated pan with lard. It is essential for the meat to brown evenly, obtaining a golden and appetizing crust. Once fried, remove the meat and in the same pan, in the remaining lard, add finely chopped onion and garlic. These will take on a special aroma, enriching the final dish.
After the onion becomes translucent and the garlic releases its aromas, take the mixture off the heat and add sweet paprika, stirring well to combine. Now is the time to season with salt and pepper, adding a dash of flavor. The drained beans will join this aromatic mixture, and everything will be well homogenized.
In a clay pot, which will give a special taste to the dish, we place a layer of seasoned beans. On top, we put the pieces of fried meat, and then cover with the remaining beans. It is important that all the ingredients are well layered to allow the flavors to blend perfectly. We cover everything with water, so that it is about two fingers above the meat and bean mixture. We season again with a dash of salt, freshly ground pepper, and a handful of dried thyme for added flavor.
We cover the pot with a lid and place it in the preheated oven, where it will stay for about 2 hours and 30 minutes. It is essential to maintain a constant temperature for all ingredients to cook evenly and for the flavors to blend.
In the end, the dish will be ready to serve. The rich and aromatic taste of the beans will perfectly combine with the meat juices, and the dish will be an explosion of flavors. It is served hot, alongside crunchy pickles that add a pleasant contrast, and, of course, a glass of cold homemade wine that will perfectly complement this traditional meal. It is a dish that not only nourishes but also brings people together, evoking dear memories and traditions.
