Who doesn't love to enjoy a delicious, flavorful salad that perfectly complements a juicy steak? Today, I invite you to discover a winter salad recipe that will surely bring family and friends together around the table. This recipe is not only tasty but also packed with nutrients, based on fresh and healthy vegetables. Plus, it's an excellent way to preserve seasonal vegetables, so you can savor them even in the colder months.
Preparation time: 30 minutes
Marinating time: 2 hours
Cooling time: 30 minutes
Total time: 3 hours
Number of servings: 13 jars of 750 ml
Ingredients:
- 2 kg green tomatoes
- 2 cauliflowers (about 3 kg)
- 2 kg peppers (1 kg green, 1 kg red)
- 1 kg carrots
- 1 large celery with leaves
- 3 onions
- 1 l vinegar
- 0.5 l oil
- 0.5 kg sugar
- 5 tablespoons salt
- Pepper, bay leaves, mustard seeds (to taste)
Step 1: Preparing the vegetables
Start by washing the green tomatoes, which you will slice thinly. Place them in a large bowl, sprinkle with salt, and let them sit for 2 hours. This process will not only help extract juice from the tomatoes but will also intensify the salad's flavor.
Meanwhile, wash and prepare the other vegetables. Break the cauliflower into small florets so that they mix easily with the other ingredients. Cut the peppers into strips, and you can grate or finely chop the carrots, depending on your preference. Don't forget the celery; chop the leaves and root into small pieces to add extra flavor.
Step 2: Preparing the brine
In a large pot, add the vinegar and bring it to a boil. Once it starts to heat up, add the sugar, oil, pepper, bay leaf, and mustard seeds. Mix well to ensure the sugar is completely dissolved. Let the brine cool for about 30 minutes. This step is crucial, as hot brine can affect the texture of the vegetables.
Step 3: Assembling the salad
After the vegetables have been salted for 2 hours, drain them well. Start mixing them in a large bowl, adding the green tomatoes, cauliflower, peppers, carrots, and celery. Ensure the mixture is homogeneous and the vegetables are well distributed.
Step 4: Filling the jars
Place the vegetables into jars, pressing them down slightly to remove air from inside. This will help with better preservation. Once you have filled the jars, pour the cooled brine over the vegetables, ensuring they are completely covered.
Step 5: Sealing the jars
Seal the jars with lids and label them to know when you made the preserves. Then, store them in a cool, dark place to keep them perfectly until you serve them.
Useful tips:
- You can also add other vegetables, such as cucumbers or radishes, according to your preferences.
- If you want a spicier salad, add hot peppers to the brine.
