- 1/2 vanilla pod

### Instructions

1. Preparing the melon
Start by selecting a ripe melon with a strong aroma and firm texture. Wash it well under running water. Use a sharp knife to peel it and remove the seeds. Cut the flesh into small cubes, about 1 cm, to facilitate cooking.

2. Cooking the jam
Place the melon cubes in an enamel pot, which is ideal for preventing sticking. Add 1/2 vanilla pod, cut lengthwise, to release its flavors into the jam. Boil the mixture over high heat for about 10 minutes, stirring constantly with a wooden spoon or a heat-resistant plastic spoon. This technique will help the fruit release its juice, and the flavors will blend harmoniously.

3. Sweetening and acidifying
Once the melon starts to break down, add the 4 tablespoons of lemon juice. The lemon juice will not only add a note of acidity that balances the sweetness but will also help preserve the color of the jam. Then, add 200 g of honey, mixing well until completely dissolved. You can adjust the amount of honey according to your sweetness preferences.

4. Thickening the jam (optional)
