Total time: 4-6 hours 15 minutes
Number of servings: 4-6

Apricot ice cream is a simple and delicious dessert, perfect for hot summer days. With a creamy texture and an intense flavor of fresh apricots, this recipe will indulge you with every spoonful. Here’s how to prepare it step by step.

Ingredients:
- 500 g ripe apricots
- 500 g sugar
- 1 liter water
- 1/2 lemon

Step 1: Preparing the apricots
Choose fresh, ripe apricots without blemishes or defects. It is essential that they are well-ripened to achieve a flavorful ice cream. Wash them thoroughly under cold running water, then cut them in half and remove the pits. In a bowl, mash the apricots with a wooden spoon until you obtain a puree. Transfer the puree onto a clean cheesecloth or sieve and let it drain for about 30 minutes to extract the juice.

Step 2: Preparing the syrup
In an enamel pot, add the sugar and one liter of water. Place the pot on low heat and stir constantly until the sugar completely dissolves. Do not bring the water to a boil; it is enough to heat it well. Once the sugar is completely dissolved, remove the pot from the heat and let it cool slightly.

Step 3: Combining the ingredients
Add the apricot juice obtained to the cooled sugar syrup. Squeeze the juice from half a lemon and mix the mixture well. The lemon juice will not only enhance the apricot flavor but will also help maintain a vibrant color of the ice cream.

Step 4: Freezing
Pour the mixture into special ice cream molds or plastic containers. Make sure to leave a little space at the top, as the mixture will expand as it freezes. Cover the molds with a lid or plastic wrap to prevent ice crystals from forming. Place them in the freezer and let them freeze for 4-6 hours.

Step 5: Serving
Once the apricot ice cream is completely frozen, remove the molds from the freezer. If you used silicone molds, the ice cream will be easy to remove; otherwise, you can dip the molds in warm water for a moment to loosen it. Serve the ice cream with pieces of fresh apricots or whipped cream for a refined experience.

Unique suggestion: You can add a splash of vanilla or a few sprigs of fresh mint to the apricot mixture for a distinct touch. You can also experiment with other fruits, such as peaches or plums, to create interesting variations of this quick and simple dessert.

Enjoy this summer with delicious apricot ice cream that will cool you down every day! This recipe is not only easy to make but also a perfect opportunity to enjoy seasonal fruits in a unique way.
