Marble cake
To prepare a delicious cocoa cake, the first steps are essential to achieve a perfect texture and a savory taste. We start by separating the egg yolks from the whites, ensuring that the utensils used are very clean to obtain a fluffy foam. The yolks are whisked with half of the total amount of sugar, using a whisk or a mixer at medium speed, until the mixture becomes light in color and fluffy. This is the flavorful base of our cake.
After obtaining a consistent foam, we begin to gradually add the oil, similar to how mayonnaise is prepared. It is important to add the oil in a thin stream, continuously mixing to incorporate air into the mixture. Once fully integrated, we pour boiling water over the mixture, continuing to mix. This step will help achieve a moist and fine texture inside the cake.
In a separate bowl, we beat the egg whites with the remaining sugar until we obtain a firm, glossy foam that forms peaks. This foam will add air and make the cake fluffier. After the egg whites are ready, we carefully add them over the yolk mixture, gently folding with a spatula to avoid losing air from the mixture. It is time to add our preferred essences, such as vanilla or rum, which will enhance the flavor of our cake.
Next, we sift the flour together with the baking powder to ensure there are no lumps, and gently mix with the spatula until combined. It is important not to overmix, to preserve the airy beauty of the mixture. From this mixture, we reserve 1/4 of the amount which we will mix with the cocoa to create a color contrast and enrich the flavor of the cake.
We line two loaf pans with flour or use parchment paper to ensure that the cake will come out easily after baking. We pour the plain mixture (3/4) into the pan, followed by the cocoa mixture (1/4). Using a fork, we can create a spiral or marbled pattern for an even more attractive appearance.
We place the pans in the preheated oven at 180 degrees Celsius, where they will bake for 45-50 minutes. It is recommended to check the baking with a toothpick; if it comes out clean, the cake is ready. Once cooled, we can dust powdered sugar on top or add a chocolate glaze for an extra touch of flavor. This cocoa cake will surely be a delight for any occasion!
