Ham-stuffed mushrooms
To prepare these delicious stuffed mushrooms, we start by cleaning the mushrooms. We carefully remove the stems, then wash them well under a stream of cold water to eliminate impurities. After draining them, we focus on the main ingredients. We cut the chicken breast into thin strips, then into small cubes, ensuring they will cook evenly. The next step involves cutting the smoked bacon into small pieces, and the onion is finely chopped to easily combine with the other ingredients. The bell pepper and tomatoes are also chopped, preparing them to add extra flavor to the dish.
In a heated skillet, we add a splash of olive oil and begin to sauté the smoked bacon until it becomes crispy. Then, we add the onion and let it sauté until it becomes translucent. Next comes the chicken breast, which we mix well to brown. Once the meat is almost cooked, we add the bell pepper and, finally, the chopped tomatoes. We let all the ingredients sauté well, stirring occasionally to prevent sticking. After we have obtained a fragrant mixture, we season with salt and pepper, adding our favorite herbs for an intense flavor. Once we are done, we take the skillet off the heat and add the finely chopped dill, which will provide a fresh aroma.
While the filling cools slightly, we take care of the mushrooms. Each mushroom cap is lightly brushed with olive oil, salted, and placed in a baking dish with the cavity facing up. We bake them in the oven for about 15-20 minutes, during which they will cook slightly. After taking them out of the oven, we let them cool a bit, then we start to fill them. Each cap is wrapped in slices of smoked ham, secured with a half bamboo toothpick, which will be removed before serving.
To finish the dish, we add a tablespoon of the delicious filling obtained earlier into each mushroom. Each filling is bound with a quail egg, carefully cracked on top. We place the stuffed mushrooms back in the dish and bake them until the quail egg sets, creating a golden crust. These stuffed mushrooms can be served hot or cold, and they are truly delicious, making them a perfect choice for any occasion!
