Appetizer Roll with Cheese Cream

Prepare 3 bowls and sift the flour separately along with the baking powder, according to the quantities for each colored composition. In one bowl, add black pepper, and in the other two, white pepper. Mix the dry ingredients well to ensure an even distribution of the spices. In another container, gently beat all the egg yolks with a pinch of salt, using a whisk to achieve a creamy texture. Then, while continuing to whisk, gradually add the oil until the mixture becomes homogeneous. Incorporate the sour cream and continue beating until the mixture is smooth and glossy.
Divide the obtained mixture into 3 equal parts and add grated cheese to one of them, finely chopped spinach to another, and in the third part, add tomato paste, beetroot, and paprika. Mix each composition with the corresponding flour, that is, the cheese and beetroot mixture with the white pepper flour, while the spinach composition will be combined with the black pepper flour. This step is essential for achieving a fluffy and flavorful dough.
In another bowl, beat the egg whites with a pinch of salt until they form a firm and glossy foam. Then, add 1/3 of the quantity to each of the 3 colored compositions. Use a spatula to incorporate the egg whites, being careful not to lose the air from the mixture, by folding it from the bottom up.
Pour the batter diagonally onto a large baking tray lined with parchment paper, alternating the colors to create an appealing visual effect. Place the tray in the preheated oven at 180 degrees Celsius and bake for about 20-25 minutes or until the cake is firm and passes the toothpick test. After baking, turn the baked cake over onto a damp towel, remove the parchment paper, and immediately roll it up into a log shape, using the towel to keep its form.
For the filling, mix all the ingredients in a bowl, ensuring they are well incorporated. Spread the filling evenly over the entire inner surface of the unrolled cake, then carefully roll it up again. If desired, you can add thin slices of smoked salmon over the cream cheese before rolling. Cover the roll with plastic wrap and refrigerate for a few hours, ideally from evening until morning. When ready to serve, slice with a sharp knife to keep all the colors and textures intact. This recipe will not only impress with its vibrant appearance but also with its rich taste, combining flavors in a unique way.
