Mămăliga, a traditional Romanian dish, is a symbol of family meals, appreciated not only for its taste but also for its versatility. We start by preparing mămăliga, a process that requires a little time and patience, but the result is worth all the effort.
To make a quick mămăliga, start by boiling water in a pot. It is essential that there is enough water to achieve a good texture, so use about 1 liter of water for 250 grams of cornmeal. When the water begins to boil, add salt, which will enhance the flavor of the mămăliga, and then start sprinkling the cornmeal in a rain-like manner, continuously stirring with a wooden spoon. This step is crucial as it helps prevent lumps from forming.
After you have added all the cornmeal, continue to stir patiently for 5-10 minutes until the mixture becomes a thick porridge, and the spoon can stand upright in the middle of the mămăliga. Make sure to simmer on low heat to avoid burning and smoking, allowing the mămăliga to rest a little after cooking.
Once the mămăliga is ready, prepare a heat-resistant dish that you will grease with butter to prevent sticking. Alternate layers of mămăliga and cheese, making sure to sprinkle melted butter between layers for added flavor. Continue to alternate the 3 layers of mămăliga with 2 layers of cheese, ensuring that the last layer is mămăliga. Use a spoon dipped in melted butter to create indentations in the mămăliga, where you will add the eggs.
Preheat the oven to a medium temperature and place the dish in to bake. The mămăliga will start to develop a slightly browned crust, a sign that it is almost ready. When you notice this crust forming on top, take the dish out of the oven and add a raw egg to each indentation. Sprinkle a little grated cheese over the eggs to add a savory flavor. Then, return it to the oven, allowing the egg whites to set perfectly.
Serve the mămăliga hot, ideally alongside a portion of sour cream, which will complement the rich and creamy taste of the dish.
