Leek and Potato Soup

 Ingredients: 3 pieces of leek, 3 medium-sized potatoes, 1 - 2 tomatoes, 1/2 bell pepper, oil, butter, salt, pepper, 2 liters of water, 1/2 vegetable cube, parsley

To prepare a delicious vegetable soup, start by gathering all the necessary ingredients. You will need 2 tablespoons of butter, 2 tablespoons of olive oil, 1 large leek sliced into rounds, 2 ripe and juicy tomatoes, 1 bell pepper of any color, diced, 2-3 medium potatoes, peeled and cubed, 1 vegetable cube, salt, pepper to taste, enough water to cover all the ingredients, and for an extra touch of freshness, a bunch of freshly chopped parsley.

Start by heating the butter and oil in a large pot over medium heat. Once the butter has completely melted and begins to release its rich aroma, add the sliced leek. Sauté the leek for about 3-4 minutes until it becomes soft and starts to turn translucent. This will add a sweet note to your soup.

Once the leek is ready, add the chopped tomatoes and bell pepper. Mix well to combine the flavors and let the vegetables cook together for another 5 minutes. This process will allow the vegetables to release their juices and combine into a savory mixture. Then, add the cubed potatoes and mix again.

Now it’s time to add enough water to cover all the ingredients. Add the vegetable cube, salt, and pepper to taste. Let the soup simmer over medium heat, covered, for about 20-30 minutes or until the potatoes are soft.

If you prefer a thinner soup, you can add extra water at this stage, depending on your desired consistency. When the soup is almost ready, don’t forget to add the chopped parsley, which will bring a fresh and aromatic note.

After all the ingredients are perfectly cooked, take a strainer and separate the soup from the vegetables. Using a blender, puree the vegetables to your desired consistency - either completely smooth or with chunks. Make sure the vegetables are well blended, but don’t hesitate to keep some pieces for texture if you prefer a more rustic soup.

Then, add the obtained soup back into the pot, mixing well. Taste and adjust the seasonings if necessary. Serve the soup hot, garnished with a few fresh parsley leaves and, if desired, with a slice of crispy bread on the side. This vegetable soup is not only comforting but also full of flavor, perfect for any meal!
